So I got a mail from EA regarding my suspended account recently and it says to either schedule a callback or to start a live chat. The issue for me is that when I open the support page to try and find the option to do either of these things, it does not show. The only option available to me is the e-mail option. Could really use some help solving this issue so I can continue with the support case I submitted.

First off, let me start by saying welcome to EA’s “Answer HQ”.
Answer HQ isn't just an ordinary message board or support center. It's a new approach to our community experience and a fun way of helping other players or to get answers (from players & experts)and get back in the game!
The option Live chat is "grayed out" depending on:
1) weak day (Sunday, Saturday there are less EA agents working)
day time (during night time, there are less EA agents working)
=> try another day, other day time.
2) Origin's geographical settings:
=> at https://help.ea.com choose correct Country and Regions...
...or sometimes the problem is the Origin setting:
=> go here >https://www.origin.com/account & try to correct (Country/Region and/or Language).
>3) Game title & type of your problem:
=> try to choose another kind of problem (e.g. technical support);
=> or try to choose another game title. (Note: usually EA Agents are not angry if you have chosen the wrong game or section, but this might help you to fix the Live chat option...)
