Whenever I enter the app, it makes me login, download a gigabyte worth of updates, and tells me it hasn't saved and that some progress might be lost. Does anyone know why this might be happening?

Sounds like you may need more free space on your device.

Clear off 4-6 gigs of free space on device, not a sd card

reboot your device.

It may download one more time but then be ok.

Do not play while it is downloading.

If that doesn't work, you may need to uninstall and reinstall. Only do this if you do have an account and are NOT playing anonymously. Get your Mayhem ID before you do so https://help.ea.com/en-us/help/the-simpsons/the-simpsons-tapped-out/where-is-my-mayhem-id/

and make sure you have the info for your account

The Other Device Didn't save happens when you play on more than one device, but can happen randomly and could be connected to the downloading thing.

Make sure to sync your game by going to friends screen before closing the game to make sure you don't lose progress.
