I've noticed that reverse hits are now being called as penalties. As the player loses the puck in order to brace for the hit, the game now counts that as interference. I really enjoy using back at ya in WOC all the time to counter truculence players.
I have a clip on this link.

Interference calls truly are horrible ...and no I didn't try to tie him up or pin him which actually still wouldn't be interference in that situation

I think the real eye-opening part of this clip is the game engine ignoring a blatant interference call:
McDavid never comes in contact with the puck, and Subban clearly impedes his ability to do so.
That being said, maybe not on purpose, but it does appear that your player did tie up the opponent at one point:
I notice you stick lifted, entered a puck pickup and then entered in to the tie up. This would indicate to me that you felt the stick lift was being unresponsive (due to the puck pickup animation taking precedence) and you pressed it in maybe a little longer and this then initiated the tie-up.
It's absolutely the wrong call and you're right to be complaining about this issue.
I think this offers some insight in to the penalty system. it's a mystery to me why some calls are made, and some aren't. Clearly there's logic that says ANY tie-up away from the front of the net is considered interference, as evidenced in your clip. But there's also some kind of logic that is taking blatant inference plays and using some type of RNG to determine whether or not the ref decides to call it.
Part of me thinks this is some attempt at simulating referee subjectivity. I feel this should maybe be fine-tuned so that the subjectivity is removed during blatant interference whereas, in the example of shoving someone in front of the net - the subjectivity makes more sense. That said, the subjectivity of the referee calls on the small shoves in front of the net also needs a serious re-working.

Yep, it’s hilarious…. I go to hit a player with puck, his player without puck cuts Infront of him, I hit hit him instead and I get call for interference.

Another interference call that makes no sense I have tons of clips of interference calls that make absolutely make no sense

I sometimes intentionally exploit the interference penalties. When racing to the puck and being likely the first to touch the puck, just hit X to raise your stick, and the opponent many times will hit you and get a penalty. It's stupid, but... 🤷♀️

I'm going to add to the pile-on. Playing EASHL, in games where we play with an AI he'll take one of these penalties in about two out of every three games. I don't expect much from an AI teammate, but there's no reason it should be programmed to do this with the way penalties are currently called.
The AI will ( actually for once ) engage with the puck carrier and bump him off the puck, but then follow up with a second "hit" after the puck in gone taking a penalty.

I thought this was intended to be fixed awhile back ago? In my opinion, I've been thought that the penalties in the game were wayyyy off. I've thought this from the very beginning, honestly
