I've already played a couple of hours, so I know the game works/worked, but when I tried to launch it last night (after the update) I can no longer proceed past that screen. Occasionally during my keyboard/mouse mashing I can hear a 'bling' as if there's a pop up somewhere that I'm clicking/pressing around; and I can still open the origin overlay so the window definitely knows it's open.
All of my drivers are up to date and I've tried repairing the game, uninstalling and reinstalling the game, and using a controller, nothing has worked.
I'm not sure what else to try.

Turns out it doesn't like Discord. Or more specifically Discords option to display what game you're currently running.
Glad we got there in the end.

I did yeah. I just had the diags saved from before I did it. All my drivers are currently up to date.

Tried it there. Nothing.
And I thought I'd check task manager but there's no extra background processes running with the game is running.

Checking event viewer now; nothing.
Only the game updated. Do you know if/how I can rollback to before the update?

Yeah, I doubt a windows rollback would help.
Moved the settings file. Still the same deal.

Do you have cloud saves enabled ? If so, try disabling that.
Do you have a profile file in that folder as well ? Have you also removed that ?
