If you've only just started KotFE Chapter I: The Hunt, you'll need to play through the chapters to gather new and lost companions.

If you've restarted Chapter I: The Hunt after finishing KotFE or KotET, you can use the Chapter Menu (Shift+E) to switch to a more recent Chapter, then your companions should be available again.
