When I start the game it loads with a different user ID and at level 1.
Played earlier today without issue
level 50 player
is there a way to connect my real user I’d?
have always been connected to game center
playing on the same device I always have played on

Sorry you have problems with your game progress. You should contact EA in order to get assistance.
First you will need both of your player IDs.
To contact EA Help from the game, open the side menu, choose the gear icon, then the Help & About tab and tap on the button Help.
This will open your browser. Scroll down and tap on the button Contact Us.
Now, tap on Technical support and Game progress issues.
Type your Player ID.
Tap on the button Select contact option.
Scroll down and select Email. This is the best option for your case. Fill in the form and attach screenshots of your game.
An EA Advisor will email you within 24 hours.
If you can't access the app for some reason. You can also contact EA outside of it.

If you want to do so in a different language you can choose your country of choice in the upper right-hand corner.

Thank you. I am in contact with them however, maybe some language limitations as they keep asking me the same thing over and over again, they have attempted to roll back the game, and have not resolved the issue.

they have asked me multiple times for my user ID, when I last logged in, what level I am, if I was connected to Game Center or another option. All was provided initially, and every time they have asked there after.
i have had 4 different people contact me on this issue. And we have made zero progress in resolving the issue.
i have played for over a year, have been at level 50 for months, and spent hundreds of dollars. I hope they can recover my game.

I have always connected through Game Center
During the course of this fiasco, I did play through the tutorial in order to access the cog. Should I go back and log in to EA in the game now?
also, does anyone happen to know if EA can access my original user ID in order to review my progress, purchase history, etc?

Yes, log out of Game Center and into your EA account.

That should be attached to your back up, in the future, I recommend taking a screenshot of it.

If you log out, in with EA your game should be restored and synced back with your Game Center when you log in to that again.
