Swtor have no real control on the paths used on the internet this is governed primarily through BGP routing and each router will talk to the next to find a valid path.
There is nothing unusual with BGP routing between 2 different ASs changing, a number of things can alter , also what you see on the pingplot is forward only and the return path can be different.
things like utilisation, load balancing, equipment failures etc this can alter the route used between 2 points on the internet, as seen with level 3 and Telia in your plot these are 2 backbones and both could route to the Swtor Servers differently on each ping sent.
