Unfortunately, it's impossible to unlink your PSN ID or Xbox Gamertag from your EA Account, you can only re-link them to another EA Account. Please check this article for information: https://help.ea.com/en-in/help/account/linking-your-origin-account-with-your-psn-id-and-gamertag/
