Changing Nvidia Experience settings for Apex to Optimize solved my problem.

I had the exact same problem as you. Tried your thing and it worked fine for some games then same problem happened.
When i tried to delete all files again i saw i couldnt delete one folder containing "OriginWebHelpService_Log" since another software used it. I used task manager to force quit it, and now it doesnt shut down anymore. Try to force quit OriginWebHelpService everytime it pops up in task manager.... It helped for me so far

I tried this and the game started crashing at every third game (or so I thought).After every two games I restarted the game and last full 5 matches before it crashed again. I crashed every time I jumped from the plane before so it is some kind of progress! THANK YOU! Hope this will help some of you guys.

I Seem to have fixed the issue for myself
for the following files in your game install directory.
r5apex.exe
EasyAntiCheat_launcher.exe
set: properties
compatibility
-Run In windows 8 compatibility mode
-Disable fullscreen optimization
-Run as admin
also turn off origin in-game overlay.
now go to C:\Users\USERNAME\Saved Games\Respawn\Apex\local
open videoconfig.txt
edit the line below to be your monitors refresh rate as the max and for below I'm kinda unsure i just set it to 31 and seems fine
"setting.dvs_gpuframetime_max" "60"
"setting.dvs_gpuframetime_min" "31"
set vsync to 3 for adaptive
"setting.mat_vsync_mode" "3"
save the file and set to read only so the game cannot change the values
play the game and lemme know if it works.

Same here, it keeps crashing without error. It is so frustrating, urgh.
EDIT. I have managed to fix the issue by updating my drivers and putting a fps_max cap. This is the guide that I followed: How to Fix Apex Legends Crashing Without Error - Saint
I hope it helps you guys in any way possible. Still EA needs to do something about it. Cmon guys release a new update or something!

For all of those who tried nearly every single thing: Try capping fps at 85 or 95. (+fps_max 85/95). Worked for me. Getting crashes really rarely(didnt crash in the last 3 days at all).
My specs:
i5 4440
16GB DDR3 RAM
MSI ARMOR RX580 8GB (Undervolted to 1,1V on Core, didn't try to go lower because temperatures are satisfying)
75 Hz refresh rate monitor with Freesync ON
Also I have the game installed on SSD.
