When I played the Sims 4, I already wanted to not have my family age. I pressed auto age off, but somehow they were already starting their aging process. How do you make a family stop aging?

Are the options still on? Did they actually age when their bars were full?

There are 2 auto aging options. Turn off the one for played Sims. (And unplayed sims, if you want). Progress that is already in the bar will be retained, but will not fill up further until you turn aging back on.

Played Sims are those whom you have played as at least once. "Active household" is the household you're currently playing as. "Unplayed Sims" are those whom you have never played and have not explicitly marked as played. Hope that helps

Played Sims are the households you've played with. Unplayed are the ones you haven't played with.
You can recognize the played households by the green Plumbob above their homes:
If you want to change that you can go to the options down below:
And select them as unplayed:
