Origin says that I haven't downloaded the legacy edition, but the folder in the Electronic Arts folder says Sims 4 Legacy Edition.

That folder is also showing that it can't properly sync with your iCloud Drive (the ! in the cloud icon). The issue maybe that your iCloud Drive is full, it looks that way from the update button in the top right too. Check your settings and if possible disable it completely. Then launch the game and hopefully a new Sims 4 folder will be created - https://bluebellflora.com/2017/02/06/sims-3-and-sims-4-not-loading-save-games/

Ok. If the config log is showing the same details as before I'm really not sure what is going on. Let's tell your Mac to only use the dedicated AMD GPU - open System Preferences > Energy Saver and uncheck the top box to disable Automatic Graphics Switching.
