How come we just have only 1 store and only 1 store? Would it be nice to have an duplicate store if one of the store is making something and the duplicate can make another product you need. It can save you time.

Because part of the challenge of the game is knowing what you need to build and accurately queuing up components for maximum efficiency. Especially when you're building lots of items for a cargo shipment, you need to be able to work against a clock.
The game is already almost distressingly simple, let's not make it even easier. The amount of time it takes to complete tasks is the only challenge that it has going for it.

Having another store like the one you have will help meet those cargo shipments faster and it will help you get the items faster for your building upgrades.

Yes, that's exactly my point. Making everything easier doesn't necessarily mean you'll have a more enjoyable game. It only ensures that you'll max it out and get bored with it faster, and stop playing sooner.

So whats wrong have an duplicate store? Other games like SimCity allow their players to have more than one of the same store. So whats wrong making money faster?
