I can't save my account online

I put the age on "1 year old" but I didn't know that when you put that age, you can't save your account on Google or on EA account.

How to change the age without removing the game or deleting the account and creating another one?

I suppose you're talking about the mobile game PvZ Heroes. Unfortunately, I don't think there is any way to change the age without reinstalling the app, and in your case would mean to lose the progress.
