Do we know how the PC VR will run? I’m an Oculus Rift S user but wondering if it will require Steam VR or oculus VR to run? I.e. should I just buy the game on Steam?

Yep, you can play in VR. I've added further clarifications below.
You can use these supported headsets to play on PC:
To play in VR on PC (Origin/EA Desktop/Epic launcher)
PC (Steam)
PlayStation 4

With full Virtual Reality (VR) support throughout the game and a cockpit view, you’ll feel part of the action like never before.
VR support requires a virtual reality headset, which is not provided with the game. PSVR or Oculus recommended.
I would assume any VR headset will work fine but they are possibly building the game around the Oculus Rift S.
Edit: HTC Vive and Valve Index is also definitely supported.
