I have exactly the same issue with Oculus Quest 2 :-(
Sometimes I can't move right either, and only appears to happen while in VR using the mouse; the down arrow key pitches down ok

I have tracked down the trigger for this bug...

When raising the VR resolution scaling above the default of 80 percent, the game shifts the centerpoint of the mouse control down and to the right, increasing with the amount of upscaling added.

This results in little to no flight response when trying to pitch down or yaw to the right. Or in the case of an inverted Y axis, little to no response when trying to pitch up or yaw to the right.

The response to pitch and yaw in the opposite directions also becomes greatly exaggerated due to the new greater range of the axes in those directions.

Should make tracking down the exact cause easier.
