what (If any) are the rewards for doing war stories on hard or hardcore? is there any point? 

can the challenges be done on any difficulty?

If you only focus on in-game rewards, then NO there is nothing that requires you to do it on Hardcore.

If you get all the Letters, the Challenges, and just complete it on any difficulty mode you'll get a unice Melee Weapon for the Multiplayer.(So 3 in total, one per War Story)

The only thing you unlock by doing it on Hardcore is a Achievement (for Xbox, PC) or called Trophy (on PS4).

Ps: If you complete it on Hardcore right away, you can earn 3 Achievements/Trophies at once! (For doing it on Middle, Hard, Hardcore)

Yes, Challenges can be done on any difficulty but you also can receive an achievement for completing all the War Stories on Hard and Hardcore.

PS: Do the War Story Challenges on easy.
