Question About Restaurants

I've noticed A LOT of people complaining that whenever Sims eat at a restaurant, the food quality is almost always normal or worse. My question is, after assigning a Sim to successfully manage a 5 star restaurant, will its performance go down if you decide to sell it or will the employees remain well trained? I ask this cause I want the Sim managing the restaurant to focus on another career. This may be a silly question but others probably have the same question.

@LuisLTPG the last time I own a restaurant it was a 5 star, when I sold the restaurant and went back to visit a few days later, the game replace everyone with new npc. 

but this was while ago. not too sure if ea change it
