Dunk and blocking issues

I have the hall of fame equiped on my character but never have I ever done any of the dunk animations that it shows you can do. Is there a way to actually do those dunks in game or is it random ?

Also are there chase down blocks in the game ? The only blocks I've seen from behind are when the players grab the ball with 2 hands. I'm tired of giving up points because I'm not able to get chase down blocks or any block from behind.
