So guys, how can I buy a game using EA Wallet if I can't select that payment method in either the browser or the EA app?

This could mean that the EA Wallet is not available in your region/country. Also, gift cards cannot be used to pre-order games.
Please check this article to make sure if the EA wallet cards are available in your country
