I'm sorry, I'm not sure I understand what's happened. Could you help me understand?
Did you get a new email and want to use that on your EA account?
Did you lose access to the email on your EA Account and need help updating the account email as a result?
Did someone else change the email on your EA account and you need help recovering the EA account?
Can you share why you'd like to remove the PSN? There may be a better alternative.
