many things could be affecting your ping. For example, others in the household streaming to netflix, etc, could be an issue with your ISP along the route you are being sent to the server, could be an overloaded node that you are on, the datacenter in which the server is hosted at could be experiencing issues, background programs running on your computer that are updating.
When you start experiencing these ping issues, try running a traceroute to the server and see if there are any issues along the way you are routed.
