If my Sim gets the "Germy" moodlet, will she have to stay home from work to be cured?

They don't have to but they seem to get cured faster if they stay home (and don't give it to others).

 

You can call in sick through your phone.

As well as keeping them home, you can also send them to the hospital and get a vaccination for 250 simoleons. They should be flu-free for the year. This also can cure your sim if they are already sick.
