Invite friends and visit their cities, then click on the houses with Chrismas lights to collect the tax for them and you will get extra Santa coins. You also get more coins for Christmas trees and various activities, homer stuck in the chimney and Lisa doing snow angels give a good return. Ned snowmobiling takes longer but also gives a decent return. You don't get more coins for building more houses, it's one serving per house type unfortunately, but willies shack and frinks lab both give coins too.
