First off, let me start by saying welcome to EA’s “Answer HQ”.
If don't want rumble at all you could always just open the controller and cut the wires to the rumble motors.
p.s.: If you don't like this suggestion, please don't be mad on me...
...I just got this idea, because I like to think 'Outside of the Box'.

Unfortunately that won't be an option... Thanks for the suggestion though... But seriously, I can no longer play with the controller rumble/vibration due to wrist injury...

Does anyone know how to turn off or disable the controller vibration/rumble in Need for Speed 2015? I can no longer play it, as wrist injury means that the vibration can serverely damage my wrists. Please offer any help or suggestions?... That would be great, thanks. (I play it on Xbox One)

You can manually turn off vibration on your Xbox Controller.
Press the middle button then go to all settings > ease of access > controller > vibration settings.
