Using coins vs Create Instantly

Because I had very few red gems in my Bejeweled Stars Sky Lab, I chose to go with the "create instantly" option and use coins rather than use gems. Well I THOUGHT is was rather than using gems. Does it always take both or was this a mistake on the tech side? I would "sell" them back if I could! Thanks.
